With a focus on gardening, CSA foods, and saving money this month, it’s time to get creative with tomatoes. One plant with heirloom tomatoes in my garden has yielded about a dozen so far, while the other plant has provided about 6 dozen cherry tomatoes (shaped like pears) and counting. When you add these with the 4-5 tomatoes I receive weekly via the farm, using the same recipes repeatedly gets old. Scroll down for creative ideas on how to put your produce to use.

Chicken Tortilla Soup: chicken broth, sriracha, shredded seasoned chicken, tomatoes, onions, jalapenos, corn, garlic, homemade tortilla strips, avacado, sharp cheddar cheese, lemon and lime juice. (I ended up skipping the sour cream)

Core out the mustrooms and fill with Herbs de Provence Chevre (Goat Cheese) and tomatoes, topped with dried parsley.

Now that I have a blender, the possibilities are endless. Can’t wait to make spaghetti sauce and chili in the near future…..if anyone else has ideas on how to get rid of tomatoes, I’m all ears.
